Allergy or intolerance?
Whether a food reaction is caused by a sensitivity, intolerance, or allergy, offending foods should be avoided. Bodily responses may be different for allergies and intolerances. A food allergy or hypersensitivity causes an abnormal immune system response to a food, producing antibodies against the food. Food allergens are not typically broken down by cooking or digestion. As a result, they survive to cross the gastrointestinal lining, enter the bloodstream, and target organs, causing allergic reactions throughout the body.

Food intolerances
A food intolerance is a negative reaction to some element in a food, causing symptoms in one or more body organs or systems. While food intolerances can cause some of the same symptoms as allergies, the immune system is not responsible for the symptoms of a food intolerance. Food intolerances cause abnormal physiological reactions, such as digestive problems, respiratory responses, or skin reactions.

Common food intolerances include lactose deficiency, where a person has insufficient quantities of the enzyme to digest lactose, and gluten intolerance, caused by Celiac disease. Sensitivities to dyes, preservatives or additives in food (such as MSG) can cause adverse reactions as well.

Because allergies can cause anaphylactic responses, the community tends to be respectful and understands the importance of providing accurate ingredient information. Often, food intolerances do not garner the same respect, causing an individual to ingest the offending ingredients unknowingly and resulting in potentially difficult and dangerous reactions.
